		<description>&lt;p&gt;The food system is all of the people and activities that play a part in growing, transporting, supplying, and, ultimately, eating food. These processes also involve elements that often go unseen, such as food preferences and resource investments.&lt;/p&gt;
&lt;p&gt;Food systems influence diets by determining what kinds of foods are produced. They also influence what foods people want to eat and are able to access.&lt;/p&gt;
&lt;p&gt;The different parts of the food system include food supply chains, food environments, individual factors, and consumer behavior, as well as external drivers (factors that push or pull at the system). These different parts shape food systems and can lead to both positive and negative outcomes.&lt;/p&gt;

		<description>&lt;p&gt;The relationship between the global food system and the worldwide rapid increase of obesity and related diseases is not yet well understood. A reason is that the full impact of industrialized food processing on dietary patterns, including the environments of eating and drinking, remains overlooked and underestimated. Many forms of food processing are beneficial. But what is identified and defined here as ultra-processing, a type of process that has become increasingly dominant, at first in high-income countries, and now in middle-income countries, creates attractive, hyper-palatable, cheap, ready-to-consume food products that are characteristically energy-dense, fatty, sugary or salty and generally obesogenic. In this study, the scale of change in purchase and sales of ultra-processed products is examined and the context and implications are discussed. Data come from 79 high- and middle-income countries, with special attention to Canada and Brazil. Results show that ultra-processed products dominate the food supplies of high-income countries, and that their consumption is now rapidly increasing in middle-income countries. It is proposed here that the main driving force now shaping the global food system is transnational food manufacturing, retailing and fast food service corporations whose businesses are based on very profitable, heavily promoted ultra-processed products, many in snack form.&lt;/p&gt;

		<description>&lt;p&gt;Supermarkets are traditionally viewed by development economists, policymakers, and practitioners as the rich world's place to shop. The three regions discussed here have a great majority of the poor on the planet. But supermarkets are no longer just niche players for rich consumers in the capital cities of the countries in these regions. The rapid rise of supermarkets in these regions in the past five to ten years has transformed agrifood markets at different rates and depths across regions and countries. Many of those transformations present great challenges&#8212;even exclusion&#8212;for small farms, and small processing and distribution firms, but also potentially great opportunities. Development models, policies, and programs need to adapt to this radical change.&lt;/p&gt;

La r&#233;flexion men&#233;e au sein de duALIne a permis, au travers d'entr&#233;es choisies en fonction de leurs liens et impacts potentiels sur la durabilit&#233; de l'alimentation, de dresser un &#233;tat des lieux des d&#233;terminants majeurs qui ont pr&#233;sid&#233; aux &#233;volutions pass&#233;es des syst&#232;mes alimentaires, d'identifier les points critiques de ces syst&#232;mes, et enfin, de d&#233;gager des questions &#224; la recherche pour de futurs programmes. Cet ouvrage int&#233;ressera les d&#233;cideurs ainsi que toutes les parties prenantes du domaine de l'alimentation.&lt;/p&gt;
